    A Taste of New Mexico in Nashville


    For those of you who know me personally, you know that once a year I take a trip to visit my cousin and his family. I look forward to this trip because it is the perfect getaway from the craziness that is Los Angeles. It allows me to spend time with some family, and disconnect with LA, even if it is only for a few days.

    This year, they happened to be in Nashville, Tennessee, and I was excited to visit a new place. Believe it or not, this was my first trip to Nashville. Dylan and I hopped on a plane and headed over to Nashville for Super Bowl Weekend.

    I wasn't sure if I was going to blog during my trip, because like I mentioned earlier, I really use this time to take a break from all things work related. After spending a few days in Nashville, and eating a particularly delicious Mexican restaurant, I decided to share a couple moments from the trip.


    For lunch one day, my cousin recommended a nearby Mexican restaurant named Sopapillas. I'm always down for good Mexican food so I was excited to check out this spot. 

    At first glance, the menu didn't seem like anything special, but as I saw the various dishes coming out from the kitchen I knew that the food was going to be delicious.

    I can always tell if the restaurant is going to be good based on their chips and salsa, and these were perfect. We also ordered guacamole and queso for the table. The guacamole was delicious and fresh. You could taste each ingredient and the portion was generous as well.

    The queso was by far the showstopper. I don't know what exactly went into this queso but it was by far one of the best I have ever tasted. It was creamy, cheesy, and spicy enough to give you a kick without burning your mouth. I've been craving this queso since we left.


    For my entree, I went with my cousin's recommendation and got the "El Pepe" shrimp quesadilla. The quesadilla consists of chipotle shrimp, bacon, corn relish, cheese, lettuce, pico, and baja sauce. 

    If you are a fan of the sweet/savory combination than this is the dish for you. The chipotle shrimp and the sauce they use go so well together. I wasn't able to finish the entire meal either, so I was more than happy to take some to go for leftovers. Overall, I highly recommend checking out Sopapillas if you are in the Nashville area.

    Before I close out this post, I wanted to share a little bit about my cousin's foundation, the Ryan Animal Rescue Foundation, founded by Logan and his wife Ashley. The Ryan Animal Rescue Foundation partners with animal welfare organizations around the world promoting adoption and offering grants and educational opportunities to better the lives of animals.

    Together, Logan and Ashley have helped many dogs find their forever home through the #RyansMonthlyRescue program. On the 26th of every month, representative of Logan's jersey number, Logan shares an adoptable dog on his social media pages and helps spread awareness.
